Salads Made Simple (Not Boring!)

Trying to make sure you get in those greens during this holiday season of parties, chocolate and empty calorie drinks? You will be oh so happy you did so with these delicious dishes—let me show you how to make 4 amazingly NON-BORING salads that will have you CRAVING MORE!

Note: Use the amount of each ingredient that you desire

Dessert Salad

  • Fresh spinach
  • Blueberries
  • Blackberries
  • Raspberries
  • Sunflower seeds
  • Almonds
  • Avocado oil
  • Sweet balsamic (I use Acropoolis Organics’ mousto balsamic)

 

Spur of the Moment Salad

  • Orange bell peppers
  • Cucumber
  • Romaine lettuce
  • Kalamata olives
  • Hemp shells (aim for a minimum of 3 tbsp to get ~10g protein)
  • Extra virgin olive oil
  • Dash of sea salt

 

Spring Mix Salad

  • Romaine lettuce
  • Cooked chickpeas
  • Yellow bell pepper
  • Red onion, minced
  • Extra virgin olive oil
  • Cracked black pepper

 

Wholistic Salad

  • Cooked quinoa
  • Cucumber (cut into small chunks)
  • Avocado
  • Cooked chickpeas
  • Extra virgin olive oil
  • Dash of cracked black pepper

Do you ever crash midday and feel like you just need to take a nap? I have totally been there before. Man how good that nap feels. Sometimes you may get the nap in but still feel tired afterwards, I’ve been there too! The one critical thing that so many of us are neglecting is protein! Protein is an amazing source of energy—it keeps us fuller for longer, it stabilizes our blood sugar which leads to less crashes in energy, and it helps to slow the release of carbs in the bloodstream when eaten in combination. I just can’t say enough good things about it.

When we eat things, especially carbohydrate heavy meals, the amount of sugar released into the bloodstream can lead to an intense spike in our blood sugar only to be followed by an intense drop in our blood sugar which translates into feeling like crap/lethargic/tired. Eating protein doesn’t only slow the release of that sugar, it helps to curb the crash and stabilize your energy as a result.

It is especially important to eat protein in the morning, generally speaking. This will keep you full and energize you at the start of the day. Below is a list of some great protein packed foods to include in your diet as breakfast or snacks throughout the day, and notice, they are easy and nearly effortless to prepare:

• Eggs (hard boiled with olive oil mmm)
• Meat
• Chickpeas (great on salads!)
• Lentils

• Protein shakes
