Ingredients:

1 1/2 cups all-purpose glutenfree flour
1/2 tsp baking powder
4 tbsp cinnamon
1 tsp ginger spice
1 tsp nutmeg spice
1 1/4 cup shredded carrots
1/4 organic maple syrup
2 eggs
1 tsp vanilla extract
1 1/2 cups apple sauce

Mix all ingredients together. Blend on high with an electronic mixer. Bake at 350 for 50 minutes.

Let muffins set for 1 hour after they are finished cooking. The middle may seem gooey unless you let it set.
